The waters of the Gulf of Mexico mix with the Mississippi Sound estuary waters, which flow to create the perfect saltwater for oysters to grow in, creating their amazing taste. The barrier islands of the Gulf of Mexico create the perfect environment for the oysters to thrive. Modern off bottom grow out techniques create both a deep cup and a clean shell.
